Hold everything — this sweet potato cornbread is a delicious upgrade you didn’t know you needed. I threw a leftover sweet potato into a cornbread batter on a whim and ended up with crisp edges, a tender, buttery center, and warm notes of cinnamon and nutmeg. Pouring the batter into a screaming-hot skillet gives it that irresistible golden crust. This is now my go-to cornbread—there’s no going back.

No sweet potatoes in your cornbread? You’re missing out!
For a long time I thought cornbread was either dry and crumbly or too cake-like and sweet. After many experiments I realized adding mashed sweet potato changes everything: it keeps the bread moist without turning it into a dessert. The mashed sweet potato lends natural sweetness, moisture, and a beautiful color while keeping the cornbread tender and substantial. It’s great with chili, barbecue, or simply with butter and honey.
📋 Ingredients and notes
You’ll need sweet potatoes, yellow cornmeal, all-purpose flour, baking powder, buttermilk, eggs, butter, granulated and light brown sugar, salt, baking soda, cinnamon, and nutmeg. These combine into a cornbread that’s sweet, moist, and perfectly balanced.

Shruthi’s Top Tip
Preheat the cast iron skillet before adding the batter to create a crisp, golden crust. Don’t skip this step!
- Mix just until combined. A few lumps are okay—over-mixing leads to dense cornbread.
- Turn up the nutty flavor: brown the butter a minute longer until it smells toasted before adding to the batter.
- Test for doneness: a toothpick should come out with a few crumbs, not wet batter. Let the cornbread rest for 10 minutes before slicing so it holds together.
The best ways to cook sweet potatoes for cornbread
Choose the method that fits your time and flavor goals.
Microwave: Rinse and poke holes, microwave 5 minutes, flip and microwave another 5 minutes or until tender. Cool and scoop out the flesh. Fast and convenient.
Boiling: Peel and quarter sweet potatoes, boil until fork-tender (about 10 minutes), drain and mash. Draining well prevents a soggy batter.
Roasting: Rub whole sweet potatoes with oil, poke holes, and roast at 425°F for 35–45 minutes until soft. Roasting gives deeper, caramelized flavor.
Canned sweet potato purée works in a pinch, but fresh yields the best texture and flavor. If you want an ultra-smooth batter, pulse the cooked sweet potato in a food processor or blender.

📖 How to make sweet potato cornbread
Once your mashed sweet potato is ready (about 1 cup mashed), follow these steps.
- Melt butter: Melt 5 tablespoons of butter and set aside to cool slightly.
- Preheat oven and skillet: Preheat oven to 400°F and place a dry 10-inch cast iron skillet in the oven while it heats. The hot skillet helps form a crisp crust.
- Combine dry ingredients: In a medium bowl, whisk together 1½ cups yellow cornmeal, ¾ cup all-purpose flour, ½ cup granulated sugar, 3 tablespoons light brown sugar, 1 tablespoon baking powder, 1 teaspoon salt, ½ teaspoon baking soda, ½ teaspoon cinnamon, and ¼ teaspoon nutmeg. Set aside.
- Mix wet ingredients: In a large bowl, whisk 1 cup buttermilk, 2 eggs, and the mashed sweet potato until smooth. Stir in the cooled melted butter last.
- Combine: Fold the dry ingredients into the wet mixture using a spatula, stirring until just combined. A few lumps are fine—avoid overmixing.
- Prepare the skillet: Carefully remove the hot skillet from the oven and add 3 tablespoons of butter, swirling to coat the pan. Immediately pour in the batter and smooth the top.
- Bake: Return the skillet to the oven and bake 25–30 minutes, until the top is golden and a toothpick inserted in the center comes out with a few crumbs but no wet batter.
- Rest and serve: Let the cornbread cool in the skillet for at least 10 minutes before slicing. Serve warm with butter, honey, or maple syrup.

Variations & Substitutions
Muffins: Preheat oven to 375°F and line a 12-cup muffin tin. Divide the batter and bake 18–22 minutes. Cool 5 minutes before removing.
- Vegan: Replace butter with melted coconut oil or vegan butter, use dairy-free milk (to make vegan “buttermilk,” mix plant milk with 1 tbsp vinegar), and substitute eggs with flax eggs.
- Cornmeal: Use fine or medium yellow cornmeal; white cornmeal is acceptable but will slightly alter flavor.
- Sugar: If you don’t have brown sugar, all granulated sugar will work, though brown sugar adds depth.
- Buttermilk substitute: Mix 1 cup milk and 1 tbsp vinegar or lemon juice and let sit 5 minutes.
- Spice kick: Add a pinch of cayenne or chili powder for a subtle heat.
- Extra tenderness: Add a tablespoon of sour cream or Greek yogurt to the batter.
🍴 How to serve cornbread
My favorite way to enjoy this cornbread is warm with a pat of butter and a drizzle of honey. It pairs beautifully with chili, barbecue, or braised greens and is equally welcome at a summer cookout or a cozy dinner.

🍴 Storage and reheating suggestions
Store: Wrap leftovers in foil or place in an airtight container. Keep at room temperature up to 2 days, or refrigerate up to 5 days.
Reheat: Wrap slices in foil and warm in a 300°F oven for 10 minutes, or crisp them in a skillet with a little butter for revived edges.
