At our favorite spot, Si Señor, the warm, bubbling cheese arrived and conversation stopped—everyone was focused on digging in. We spooned the cheese onto chips and into soft tortillas, pausing only to agree that we needed another round.

What makes this version so irresistible is the contrast between the creamy interior and the thin, golden cheese crisp that forms around the skillet’s edge. It’s rich, simple, and endlessly satisfying.

Before we left, I asked the waiter how they prepared it. He smiled and said, “It’s just cheese — two kinds, melted in a skillet.” That was all I needed to know. When he named the cheeses—good quality Monterey Jack and Manchego—I felt confident we could recreate that same irresistible skillet at home.

Serve this with crunchy tortilla chips or warm, soft tortillas. Add a bright tomatillo salsa on top for acidity and a little heat, and consider a refreshing margarita for the full experience.

  2. Add the shredded cheeses and stir constantly with a wooden spoon until the cheeses melt, become smooth and bubbling, and a thin, golden crust forms at the edge—about 4–5 minutes. Keep the heat moderate so the cheese melts evenly without burning.
  3. Spoon the green tomatillo salsa over the melted cheese and serve the skillet warm alongside tortilla chips and soft tortillas.
