Mini Spinach and Neufchatel Quiches with Almond Crumble Crust

Clean Eating: Spinach + Neufchatel Mini Quiches with Almond Crumble CrustBaking feels like a kind of therapy to me: deliberate, calming and reliably rewarding when a recipe is followed. There’s a quiet satisfaction in the ritual—measuring, mixing and waiting—that often ends with something warm and delicious coming out of the oven.
A quote from the movie Julie & Julia captures this feeling perfectly: “I love that after a day when nothing is sure, and when I say ‘nothing’ I mean nothing, you can come home and absolutely know that if you add egg yolks to chocolate and sugar and milk, it will get thick. It’s such a comfort.”

Spinach + Neufchatel Mini Quiches with Almond Crumble Crust

Yields 1 serving (2 mini quiches)
2 tsp ground flax meal
1 tbsp coconut flour
24 almonds, finely ground
1 tsp unsweetened vanilla almond milk
2 large eggs
1/4 cup fresh spinach, chopped
1 tsp neufchâtel
Preheat the oven to 350°F (175°C). In a food processor, combine the ground flax meal, coconut flour and finely ground almonds with the almond milk. Pulse until the mixture forms coarse crumbs resembling a graham cracker crust.
Divide the almond crumble evenly between two large muffin cups, pressing firmly into the bottom of each cavity to form a compact crust. In a bowl, blend the eggs and neufchâtel with a whisk or hand mixer until smooth. Stir in the chopped spinach, then pour the egg mixture evenly over each almond crust.
Bake at 350°F for 20–25 minutes, or until the eggs are fully set. Allow the mini quiches to cool completely in the pan before removing them—this helps the almond crust hold its shape. Serve warm or at room temperature.
Serving and storage tips: These mini quiches are great for meal prep—cool completely, store in an airtight container in the refrigerator and reheat gently before serving. They also freeze well if you want to save extras; thaw thoroughly and warm slowly to retain texture.
