Big Fat Trail Mix Cookies

¾ cup all-purpose flour
½ cup whole wheat flour
¾ cup old-fashioned large-flake rolled oats
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
¼ cup unsalted butter, at room temperature
¼ cup creamy peanut butter
¾ cup packed light brown sugar
2 tablespoons golden honey
1 large egg, at room temperature
1 teaspoon pure vanilla extract
½ cup whole natural almonds (roughly chopped if preferred)
⅓ cup pumpkin seeds
2 tablespoons flax seeds
½ cup dried cranberries
Directions
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
In a medium bowl, whisk together the all-purpose flour, whole wheat flour, rolled oats, cinnamon, baking soda, baking powder and salt until evenly combined. Set this dry mix aside.
In a large bowl, use an electric hand mixer to beat the butter, peanut butter, brown sugar and honey on high speed until the mixture is smooth and creamy, about 1 minute. Beat in the egg and vanilla until incorporated. Add the dry mixture all at once and beat on low speed just until mostly combined (about 10–15 seconds).
Use a rubber spatula to fold in the almonds, pumpkin seeds, flax seeds and dried cranberries until evenly distributed through the dough.
Using a 1.5-ounce ice cream scoop (or a large tablespoon), drop mounds of dough onto the prepared baking sheets spaced about 3 inches apart. Flatten each mound slightly with the bottom of a drinking glass or a dry measuring cup. Bake until the edges turn golden brown, about 10 minutes. Allow the cookies to cool on the pan for about 1 minute, then transfer them to a wire rack to cool completely.
These cookies stay soft and chewy for several days when stored in an airtight container at room temperature. They also freeze beautifully—store in a freezer-safe container or bag and pull a cookie or two out the night before or pop them in a lunchbox to thaw by mid-morning.
