- Spring vegetables like young zucchini, cherry tomatoes and radishes roast quickly and complement lamb’s richness.
- Roast the vegetables on the same sheet pan as the lamb for a simple one-pan meal.
- For a comforting low-carb side, serve cauliflower mash or cauliflower rice seasoned with lemon and parsley.
- For guests, a Greek-style cauliflower rice with parsley, oregano and lemon makes a bright accompaniment; serve with a cooling yogurt-based sauce if you like.

Ingredients
- 2 lamb racks (about 6–8 ribs each)
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 tbsp minced garlic (about 3–4 cloves)
- 2 fresh rosemary sprigs
- 2 fresh thyme sprigs
- Salt and freshly ground black pepper
Instructions
Preparation
- Place the lamb racks in a large resealable bag or shallow dish. Add olive oil, lemon juice, minced garlic, rosemary, thyme, salt and pepper.
- Massage the marinade into the lamb so the herbs and garlic coat the meat well. Refrigerate for a few hours or overnight for best flavor.
When ready to cook
- Remove the lamb from the fridge about 30–60 minutes before roasting so it comes closer to room temperature.
- Preheat the oven to 375°F (190°C).
- Place the lamb racks, fat side up, on a roasting pan or sheet pan. Tuck a couple of rosemary sprigs into the pan for aroma.
- If roasting vegetables, arrange them around the lamb so they roast simultaneously.
- Roast for about 20–25 minutes, then check the internal temperature with a meat thermometer. Aim for about 140°F (60°C) for medium-rare. Roast longer if you prefer a more well-done result.
- Remove the lamb from the oven, tent loosely with foil and let it rest for 5–10 minutes to retain juices.
- Slice between the ribs into chops and serve with roasted vegetables, cauliflower mash or cauliflower rice.
