Homemade Cinnamon Cereal from Scratch

It began as a small kitchen experiment. Ingredients Used in Homemade Cinnamon Cereal

  1. Milk

Milk is the primary wet ingredient and helps bind the cereal dough. You can choose whole milk, skim milk, almond milk, oat milk, or another plant-based alternative depending on taste and dietary preference. Each option subtly influences flavor and mouthfeel. For this batch I used Nestle milk, but any milk will work.

Jaggery powder is used here as a natural sweetener. It brings a deep, caramel-like sweetness that complements cinnamon better than refined sugar in many cases. Jaggery also retains trace minerals and adds richness to the flavor.

Cinnamon is the defining spice in this cereal. It provides warmth, sweetness, and aroma, turning simple ingredients into a cozy breakfast option. A little goes a long way, so measure to taste based on how prominent you want the spice to be.

  1. Peanut Butter

Peanut butter adds creaminess, a toasty nutty flavor, and extra protein. It also helps bind the mixture so the cereal holds together after baking. If you prefer, swap peanut butter for another nut or seed butter to suit dietary needs or taste preferences.

Equipment You Need

The equipment list is short and straightforward. You’ll need measuring cups and spoons for accuracy, a few mixing bowls, and a spatula to combine the ingredients. A food processor or grinder is useful to mill the oats into a fine powder. Line a baking tray with a silicone mat or parchment paper to bake the cereal evenly. I baked this batch in a countertop oven, but any oven that holds steady at 180°C (350°F) will do.

Tips for Making Homemade Cinnamon Cereal

  3. Swap peanut butter with almond, cashew, or sunflower seed butter if you have allergies or prefer a different flavor.

  5. Spread and press the dough evenly so pieces bake uniformly.
  6. Cut the cereal into uniform squares using a pizza cutter or sharp knife to ensure consistent baking.
  7. Allow pieces to cool completely before storing so they stay crisp.

Ingredients
  • 1/2 cup oats
  • 2 tbsp jaggery powder
  • 2 tbsp cinnamon powder
  • 2 tbsp peanut butter
  • 3 tbsp milk
Instructions
  1. Preheat the oven to 180°C (350°F) and line a baking tray with a silicone mat or parchment paper.
  2. Grind the oats in a mixer or food processor until they reach a fine powder (or leave slightly coarse for extra crunch).
  3. In a bowl, combine the ground oats, jaggery powder, cinnamon powder, peanut butter, and milk.
  4. Mix thoroughly to form a cohesive dough. If it feels too dry, add a little more milk; if too wet, add a touch more oat powder.
  5. Place the dough between two sheets of parchment paper and roll it out to an even thickness.
  6. Cut the rolled dough into equal squares using a pizza cutter or a sharp knife.
  7. Bake for 20–25 minutes at 180°C, watching closely toward the end so pieces do not burn. Baking time may vary with oven type and thickness.
  8. Allow the squares to cool completely on a rack until they crisp up. Serve with milk or store in an airtight container.
  9. This recipe can be doubled for a larger batch. Stored in a cool, dry place in an airtight container, the cereal keeps well for up to one month.
