Ingredients
- 15 oz great northern beans (or other white beans) — about 1.5 cups cooked
- 1/2 cup oats
- 3/4 cup spinach
- 5–6 artichoke hearts (canned or jarred)
- 1/2 teaspoon salt
- 1/4–1/2 teaspoon black pepper
- 1/4 teaspoon cayenne
- 4 cloves garlic
- 1/3 cup chopped white or red onion
- 2 tablespoons flaxseed meal or chia seeds (or 1 Tbsp each)
- 1 teaspoon Italian herb blend
- 1/2 teaspoon onion powder
- 1/4 teaspoon cumin powder
- 2 teaspoons prepared mustard
- 2 teaspoons olive oil
- 2 teaspoons lemon juice
- 2 tablespoons nutritional yeast
- 3/4 cup small cauliflower florets
- 1/3 cup chopped carrots
- 1/4 cup cashews (or seeds for a nut-free version)
- 1/4 cup breadcrumbs (or oat flour or chickpea flour)
Instructions
- In a food processor, combine the beans, oats, spinach, artichoke hearts, garlic, onion, and spices from salt through cumin. Process until most of the beans are mashed and the mixture is cohesive. Move this mixture to a mixing bowl.
- Add the mustard, olive oil, lemon juice, and nutritional yeast to the bowl and mix until evenly incorporated.
- In the food processor, pulse the cauliflower, carrots, and cashews until they form small crumbs. Add these to the bean mixture and mix well.
- Stir in the breadcrumbs (or alternative flour) to reach a soft, non-wet but not crumbly consistency. Add more or less as needed.
- Shape the mixture into patties by packing into a 3.5-inch cookie cutter or forming gently by hand. Place patties on a parchment-lined sheet.
- Options to cook the patties:
- Freeze and grill: Freeze the patties for 15 minutes to firm up. Lightly spray or brush with oil and grill frozen patties 3–4 minutes per side.
- Par-bake and grill: Bake the patties at 400°F (200°C) for 20 minutes, then grill 3–4 minutes per side. Refrigerate if you plan to grill later.
- Bake only: Bake at 400°F (200°C) for 20 minutes, flip, and bake an additional 10–15 minutes until firm and golden.
- Serve the patties with sauces and toppings such as tahini, cucumbers, tomato, pickles, caramelized onions, sriracha, chipotle mayo, vegan cheese slices, ketchup, and mustard.
- Variation ideas: Swap other beans, fold vegan cheese into the patties, or add a chipotle pepper with adobo in the initial processing step for smoky heat.
