Made another chocolate hazelnut treat recently—my love for all things hazelnut butter is still going strong. These choco-hazelnut fudge cups are a quick, no-bake dessert that’s creamy and delicate, yet packed with the deep flavors of hazelnut, espresso, and cacao butter, finished with a dark chocolate topping.

The recipe is flexible and forgiving. Below are the ingredient list, straightforward instructions, and a handful of variations and tips so you can customize these fudge cups to your preference.
Variations and tips
- The bottom hazelnut layer is intentionally soft — I used water to keep it lighter. If you want a richer, firmer texture, substitute one or two tablespoons of the water with additional cacao (cocoa) butter.
- If you can’t find cacao butter, coconut oil is a fine substitute. It firms up a little less than cacao butter, so you may want to use a touch more. You’ll lose the cacao flavor, but it still makes for a delicious base.
- Use very creamy hazelnut butter for the smoothest texture. If the butter is old or separated and dry, stir it well or choose a fresh jar — firm or crumbly butter will give a drier result.
- You can swap the hazelnut butter for another nut butter if desired: roasted almond or pecan butter provide depth, and peanut butter is a reliable, tasty alternative.
- If you enjoy a crunchy surprise, tuck a roasted coffee bean or two into the center of each cup before adding the chocolate. It’s optional but adds a pleasant bite and an espresso boost.
- For the chocolate topping I used melted vegan dark chocolate. If you’d like a softer top, swirl a little hazelnut butter into the melted chocolate before spooning it over the cups. For fully coated fudge cups, freeze the assembled base fully and then dip each cup into melted chocolate.

Ingredients
Hazelnut layer
- ½ cup creamy natural hazelnut butter
- 3 tbsp maple syrup
- 3 tbsp water* (see notes for substitution)
- 2 tbsp cacao (cocoa) butter, melted**
- 1 tsp pure vanilla extract
- ⅛ tsp instant espresso powder, or more to taste
- ⅛ tsp salt
- 4 whole espresso beans (optional)
Topping
- Approx. ½ cup melted dark chocolate***
Instructions
- Bring the hazelnut layer ingredients to room temperature. In a food processor, combine the hazelnut butter, maple syrup, water, melted cacao butter, vanilla, espresso powder, and salt. Process until smooth and uniform, leaving out the espresso beans unless you intend to press them into the centers later.
- Scoop the mixture evenly into four silicone muffin liners set inside a muffin pan for support. Press down to flatten the tops. If using coffee beans, press one into the center of each cup now. Freeze the pan for 15–20 minutes to firm the layer.
- While the hazelnut layer chills, melt the chocolate for the topping. Divide the melted chocolate between the four cups and pour over the hazelnut base. Return the pan to the freezer and chill for 4–5 hours or until the chocolate is fully set.
- Store the finished fudge in the freezer until ready to serve. For a softer texture, let the cups sit at room temperature a few minutes before eating.
Notes
*Water keeps the base lighter and softer. For a firmer, richer consistency, reduce the water and increase the melted cacao butter.
**Cacao butter (also called cocoa butter) adds chocolatey flavor and helps the fudge firm up.
***If you prefer, use your favorite melted chocolate or make a DIY chocolate shell by combining melted chocolate with a little oil or nut butter to adjust firmness.
