How did this recipe come about?

I peeled and chopped the potatoes, sliced the veggies, kneaded the sausage into shapes, tossed everything in a baking dish, and popped it in the oven. The result was rustic, flavorful, and exactly what I needed.
Since that night, this casserole has been a regular go-to. It’s forgiving, easy to scale up or down, and travels well through leftovers — which is often the best part of a great home-cooked meal.

Ingredients
- 2 lbs ground sweet Italian sausage
- 2 lbs russet potatoes, peeled and cubed
- 1 cup onions, coarsely chopped
- 1 cup green bell pepper, coarsely chopped
- 1 cup red bell pepper, coarsely chopped
- 1/4 cup water
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Peel the potatoes and cut them into even-sized cubes so they cook uniformly.
- Coarsely chop the onions and bell peppers.
- Remove the sausage from its casing if needed and shape or crumble it into rectangular pieces or chunks, depending on your preference.
- Place the potatoes, sausage, onions, and peppers into a large casserole or baking dish in a single layer as much as possible.
- Sprinkle the salt, garlic powder, onion powder, Italian seasoning, black pepper, and red pepper flakes over the mixture. Toss everything well to coat evenly.
- Pour in the water and drizzle the olive oil over the top to help keep the potatoes moist as they bake.
- Cover the dish with aluminum foil and bake for about 1 hour.
- Remove the foil and continue baking for 15–20 minutes more, or until the sausage is browned and the potatoes are tender. If you like more color, broil briefly at the end, watching carefully to avoid burning.
