Crispy Prawn Spring Rolls Recipe with Sweet Chili Dip

Discover how easy it is to make crispy prawn spring rolls at home. These homemade spring rolls beat shop-bought or supermarket versions for flavour, texture and cost — with a wonderfully crisp shell and a juicy, flavorful filling.

I always head straight for spring rolls at a Chinese buffet. The crunchy fried wrapper and tender filling are irresistible, whether the rolls contain prawns or chicken. Making them at home is simpler than you might think; the only challenge is sourcing spring roll wrappers in some smaller towns. If you can’t find them locally, buy a pack when you can and freeze the wrappers for later use.

These prawn and vegetable spring rolls are filled with shredded cabbage, grated carrot, mushrooms, bean sprouts and prawns, seasoned with dark soy sauce, oyster sauce and a touch of sesame oil. I prefer to keep the seasoning simple so the prawn flavour shines through, but you can add a pinch of Chinese five-spice if you like.

Step 1: Heat a splash of vegetable oil in a wok or large frying pan. Stir-fry the shredded cabbage, grated carrot, sliced mushrooms and bean sprouts over medium-high heat until they begin to soften, about 4–5 minutes.

Step 2: Add 1 tablespoon dark soy sauce, 1 tablespoon oyster sauce and 1 teaspoon sesame oil. Stir for another minute to coat the vegetables.

Step 3: Push the vegetables to one side of the pan, add the chopped prawns and stir-fry for 2–3 minutes until the prawns turn pink.

Step 4: Mix the prawns with the vegetables, taste and adjust seasoning with salt and pepper if needed. Remove the pan from the heat and cool the filling for about 20 minutes before wrapping.

Once the filling is cool, fold the spring rolls using the method below.

Step 5: Place a wrapper on the work surface with a corner pointing toward you. Spoon a heaped tablespoonful of filling across that corner.

Step 6: Fold the corner up over the filling, then fold the sides in toward the centre and roll into a cigar shape, leaving the final corner exposed.

Step 7: Seal the last corner with the cornflour slurry (1 tsp cornflour mixed with 1 tbsp cold water) and place the rolls on a plate or tray.

Step 8: Repeat until all wrappers are used.

Preparation

  • Dry vegetables thoroughly after washing. Excess moisture causes soggy filling and burst wrappers.

  • Pat defrosted prawns dry and chop them into small pieces so they distribute evenly in each roll.

  • Cook vegetables just until they soften—they’ll cook more during frying.

Ingredients

  • 12 spring roll wrappers
  • 180 g (6 oz) prawns, defrosted, peeled and chopped
  • 150 g (2 cups) finely shredded cabbage
  • 100 g (1 cup) grated carrots
  • 100 g (1 cup) mushrooms, finely chopped
  • 100 g (1 cup) bean sprouts
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • ¼ tsp salt and ¼ tsp black pepper (to taste)
  • Vegetable oil for frying
  • 1 tsp cornflour mixed with 1 tbsp cold water (to seal)

Method

  1. Heat a splash of vegetable oil in a wok. Stir-fry cabbage, carrot, mushrooms and bean sprouts for 4–5 minutes until slightly softened.
  2. Add soy, oyster sauce and sesame oil; stir for 1 minute.
  3. Push vegetables aside, add prawns and stir until pink, 2–3 minutes. Mix together, season, then remove from heat and cool for 20 minutes.
  4. Place a wrapper with one corner facing you. Spoon a heaped tablespoon of filling onto the corner, fold up, fold sides in and roll. Seal with cornflour slurry. Repeat.
  5. Heat oil (about 1/2 inch) in a wok or frying pan and fry rolls 3–4 minutes per side until golden. Drain and serve with dipping sauce.
