Equipment

  • Skillet
  • Mixing bowl
  • Baking sheet (optional)
  • Deep fryer or large pot
  • Slotted spoon
  • Paper towels

Ingredients

  • 1 lb ground beef
  • 1/2 cup diced onions
  • 1/2 cup diced pickles
  • 1 cup shredded cheddar cheese
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • 12 egg roll wrappers
  • Oil for frying
  • Salt and pepper to taste

Method

  1. Prepare the beef mixture:

Heat a skillet over medium heat. Add the ground beef and diced onions, breaking the meat up as it cooks. Cook until the beef is browned and the onions are soft and translucent. Drain any excess fat from the pan.

Transfer the beef back to the skillet or a bowl and stir in the diced pickles, shredded cheddar cheese, ketchup, and mustard. Season with salt and pepper to taste. Mix until evenly combined, then let the filling cool for a few minutes so it’s easier to handle when wrapping.

  2. Assemble the egg rolls:

Place an egg roll wrapper on a clean surface with one corner pointing toward you (diamond shape). Spoon about 2 tablespoons of the cooled beef mixture into the center of the wrapper.

Fold the bottom corner up over the filling, fold in both side corners, then roll tightly toward the top corner. Dab a little water on the top corner to seal. Repeat until all wrappers and filling are used.

  3. Fry the egg rolls:

Heat oil in a deep fryer or a large, heavy pot to about 350°F (175°C). Fry the egg rolls in batches—do not overcrowd the pot—for 3–4 minutes each or until they are deep golden brown and crisp.

Use a slotted spoon to remove the egg rolls and place them on a plate lined with paper towels to drain any excess oil.

  4. Serve:

Serve the cheeseburger egg rolls hot with your favorite dipping sauces. Ketchup, mustard, a creamy ranch, or a tangy burger sauce all work well. These egg rolls are best eaten fresh for the crispiest texture.

Tips and Variations

  • For a lighter version, brush the assembled egg rolls with a little oil and bake on a sheet at 400°F (200°C) for 15–20 minutes, turning once, until golden and crisp.
  • Add chopped cooked bacon or chopped jalapeños to the filling to introduce smoky or spicy notes.
  • Swap the cheddar for a melty cheese blend like American or Monterey Jack for a different texture and flavor profile.
  • If you prefer a saucier filling, increase the ketchup or add a tablespoon of mayonnaise to create a burger-style sauce inside the roll.
  • To keep egg rolls from becoming soggy, allow the filling to cool slightly before wrapping and avoid overfilling each wrapper.

Serving and Storage

Cheeseburger Egg Rolls make a great appetizer or snack. Arrange them on a platter with small bowls of dipping sauces for easy sharing. If you have leftovers, cool them completely before storing in an airtight container in the refrigerator.

Reheat in an oven or air fryer to restore crispness rather than using the microwave, which can make the wrappers soft.

Notes

This recipe captures the essentials of a cheeseburger—seasoned beef, pickles, cheese, and condiments—in a crunchy wrapper. It’s flexible and forgiving: adjust the seasoning, add ingredients you enjoy on burgers, and choose your preferred cooking method (frying or baking) to suit the occasion and your taste.
