Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups all-purpose flour
  • 1 1/2 cups old fashioned oats, not quick oats
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 14-oz. can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 1/2 tsp. grated lemon zest
  • 1 large egg yolk
  • 1 tsp. vanilla
  • 3 cups blueberries, washed and dried

Instructions

  • Preheat the oven to 350°F (175°C). Position a rack in the center. Line a 9×13-inch pan with foil, leaving an overhang for easy removal, and lightly spray the foil with non-stick cooking spray.
  • In a large bowl, combine the flour, oats, brown sugar, granulated sugar, cinnamon, baking powder, and salt. Stir in the melted butter until the mixture becomes crumbly. Reserve 2 cups of this crumb mixture for the streusel topping. Press the remaining mixture evenly into the bottom of the prepared pan to form the crust. Bake the crust for 12 minutes.
  • While the crust bakes, whisk together the sweetened condensed milk, fresh lemon juice, lemon zest, egg yolk, and vanilla in a medium bowl until smooth.
  • Remove the partially baked crust from the oven and evenly scatter the blueberries over it. Drop spoonfuls of the lemon mixture over the berries and gently spread with the back of a spoon—don’t worry if it’s not perfectly smooth. Bake for 8 minutes.
  • Sprinkle the reserved streusel topping over the lemon and blueberry layer, then bake for an additional 30 minutes, until the top is lightly browned and bubbling.
  • Allow the bars to cool on a wire rack for about 45 minutes. Use the foil overhang to lift the bars from the pan and let them cool completely on the rack. Peel back the foil and cut into bars. Store at room temperature for a short time, then refrigerate for longer storage.
