Sift and mix the dry ingredients separately, and then add them to the butter mixture alternately with buttermilk. This alternating method helps prevent overmixing or a split batter. Finish by adding fresh lemon juice, spoon the batter into liners for six cupcakes, and bake at 350°F (175°C) until a toothpick inserted in the center comes out clean—about 18–20 minutes. Cool in the pan for about 15 minutes, then transfer to a wire rack to finish cooling before frosting.

Buttermilk Substitutions

Ingredients

  • 1 tablespoon cornstarch
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 4 tablespoons (1/4 cup) unsalted butter, softened
  • 1 tablespoon lemon zest
  • 1 egg, room temperature
  • 1/4 cup buttermilk, room temperature (or 1/4 cup whole milk + 1 teaspoon lemon juice or vinegar)
  • 1 tablespoon fresh lemon juice (not bottled)

Frosting Options

Lemon buttercream, strawberry buttercream, vanilla buttercream, or cream cheese frosting are all great choices.

Instructions

  7. When cooled, frost with your chosen frosting. Store as noted above and allow refrigerated cupcakes to sit at room temperature 15–30 minutes before serving.
