These tahini honey cookies exceeded our expectations. We wanted a cookie that was egg-free and dairy-free — ideal for Lent or for anyone avoiding animal products — but we didn’t want to sacrifice the texture and flavour of a classic cookie. We avoided margarine and non-dairy butter while still aiming for a rich, tender bite. The result is a buttery-feeling cookie that’s naturally gluten-free when made with almond flour. They feel indulgent, but are simple and wholesome at their core.

Equipment

  • Stand mixer or hand-held mixer
  • Mini-scooper or tablespoon
  • Parchment paper
  • Baking tray
  • Cooling rack

Ingredients

  • cups almond flour
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • cup honey
  • cup tahini
  • 2 tbsp water if needed
  • ½ cup sesame seeds

Instructions

  1. Preheat the oven to 350°F (about 180°C).
  2. In a medium bowl, whisk together the almond flour, baking soda, cinnamon, nutmeg and salt. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), blend the honey and tahini until smooth and well combined.
  4. Slowly add the dry ingredients to the wet mixture and mix until combined. If the dough seems crumbly, add up to 2 tablespoons of water so it becomes moist enough to shape into balls.
  5. Place the sesame seeds in a shallow bowl. Using a mini-scooper or a tablespoon, form balls of dough and roll them in the sesame seeds to coat evenly.
  6. Transfer the coated cookie dough to a parchment-lined baking sheet. Use the bottom of a glass to gently press each ball into a disc about ¼ inch thick.
  7. Bake on the middle rack for 8–10 minutes, or until the edges are golden brown. Allow cookies to cool on the baking sheet for 3–5 minutes, then transfer them to a cooling rack to finish cooling.
  8. Enjoy these tahini honey cookies warm or at room temperature. They store well in an airtight container for several days.
