I love my country—and I love pie—but this year calls for something a little different: a dessert that sparkles and tastes like summer. The Berry Pavlova Cake is a great alternative when you want a light, impressive dessert that highlights fresh or frozen berries.

What ingredients are in this recipe

How to make this Berry Pavlova Cake
There are three main components—pavlovas, berry compote, and the cream filling—plus a final assembly step.
Step 1 — Make the pavlovas
Decide on the size and number of layers you want. I made three 6-inch layers, but you could make two 8-inch layers, several mini pavlovas, or one tall cake. Trace circles on the back of parchment paper to guide your shaping.
This recipe uses a Swiss meringue: the egg whites and sugar are gently heated over simmering water until the sugar dissolves, then whipped until glossy and stiff. Place the mixing bowl over (but not touching) simmering water and stir constantly until the sugar is fully dissolved—about three minutes. Transfer the bowl to the mixer and whip until thick, then add cornstarch and vanilla and whip on high until you have a glossy, stiff peak.

Spoon one third (or half, depending on the number of layers) of the meringue into each traced circle and spread gently with a spatula. Bake low and slow (see the recipe card for temperature and timing) until the pavlovas are dry to the touch and peel away cleanly from the parchment. Cool completely before assembling.
Steps 2 and 3 — Berry compote and cream filling
The berry compote is simple: cook berries with sugar and lemon juice until the mixture thickens and the liquid reduces by about half. For the cream filling, whip heavy cream with sugar and vanilla bean paste until thick and airy. You can use stabilized whipped cream or a crème légère if you prefer a firmer cream with more pronounced vanilla flavor.
Storing the pavlova
Assembled pavlova is best served immediately because the crisp meringue will soften when it contacts moisture from the cream and berries. You can make the pavlovas ahead and keep them at room temperature for up to 48 hours in an airtight container. The berry compote can be refrigerated for up to five days in a sealed container. Store the whipped cream chilled and assemble just before serving for the best texture.

Important notes and tips
- Bake time is a guideline. Ovens vary and the exact time depends on the size of your pavlovas. They are ready when the parchment peels off cleanly and the meringue lifts without sticking.
- The amount of cream and berry compote you use will determine how rustic or neat the final cake looks—add as much or as little as you like.

Pavlovas
- 5 large egg whites (150 g / 5 oz)
- 1 1/2 cups sugar (300 g / 11 oz)
- 1 tsp cornstarch
- 1 tbsp vanilla bean paste
Berry mix
- 2 cups frozen berries (or 4 cups fresh) (452 g / 16 oz)
- 1 cup sugar (200 g / 7 oz)
- 1 tbsp freshly squeezed lemon juice (about 1/2 large lemon)
Cream filling
- 1 cup heavy whipping cream (240 ml / 8 oz)
- 1/2 cup sugar (100 g / 3.5 oz)
- 1 tbsp vanilla bean paste
- 1 cup fresh berries for garnish (100 g / 3.5 oz)
Instructions
Pavlova
- Preheat the oven to 200°F (about 95°C). Line a large baking sheet with parchment paper and trace three 6″ circles or two 8″ circles on the underside; turn the paper so the pencil marks face down.
- In a heatproof bowl, combine the egg whites and sugar. Set the bowl over a pan of simmering water (water should not touch the bowl) and stir constantly until the sugar dissolves, about 3 minutes.
- Remove from heat and whip in a stand mixer with the whisk attachment on medium-high for about 3 minutes until thick.
- Stop the mixer, add the cornstarch and vanilla bean paste, then beat on high until the mixture forms glossy, stiff peaks.
- Spoon one third (or one half, depending on the number of layers) of the meringue into each traced circle and spread gently with a spatula within the lines.
- Bake for 1 hour and 30 minutes, then turn the oven off and allow the pavlovas to cool completely in the oven or on the counter. They should lift cleanly from the parchment when ready.
Berry mix
- In a medium saucepan, combine the frozen berries, sugar, and lemon juice over medium-high heat.
- Bring to a boil, stirring occasionally, then reduce heat and simmer.
- Cook for 15–20 minutes or until the liquid has thickened and reduced by about half. Remove from heat and let cool completely in a glass container before using.
Cream filling
- Pour the heavy cream into a mixing bowl, add the sugar and vanilla bean paste.
- Whip starting at low speed and gradually increase to high until the cream thickens and holds soft peaks.
Assembling
- Place one pavlova layer on your serving plate and spread 1/4–1/3 of the cream filling over it.
- Spoon 3–4 tablespoons of the cooled berry compote over the cream. Repeat with the remaining layers.
- Top with fresh berries, serve immediately, and enjoy.
