- 1 1/2 teaspoons apple pie spice (or cinnamon blend)

Apple Layer
- 1 cup peeled and diced apple (about 2 small)
- 1 tablespoon water
Crumb Topping
- 1 cup almond flour
- 1/4 cup coconut sugar
- 1/8 teaspoon salt
- 1/2 teaspoon cinnamon
- 3 1/2 tablespoons coconut oil
Instructions
- Make the cheesecake layer: In a high-powered blender, combine the soaked cashews, melted coconut oil, maple syrup, almond milk, lemon juice, and salt. Blend until completely smooth, stopping to scrape the sides as needed. Transfer to a bowl or leave in the blender until ready to assemble.
- Make the caramel apple layer: In a medium bowl, whisk together the cashew butter, maple syrup, apple pie spice, and salt until smooth. In a small skillet, add the diced apple and water and cook over medium heat 4–5 minutes until the water is absorbed and the apples are just tender. Fold the cooked apples into the cashew-caramel mixture.
- Make the crumb topping: In a small bowl, combine almond flour, coconut sugar, salt, cinnamon, and coconut oil. Mix until the texture is crumbly and evenly combined. If desired, chill briefly to firm up.
- Assemble: Using 4 jars (about 7 oz each), layer in this order: a scoop of cheesecake, 1/4 of the caramel apple mixture, a sprinkle of crumb, more cheesecake, and finish with the remaining crumb topping.
