  • 2 ripe but firm pears, peeled
  • 1/2 cup fresh orange juice
  • 1 cup dry white wine
  • 1/3 cup granulated sugar
  • 1 cinnamon stick
  • 1/8 teaspoon freshly grated nutmeg
  • 1/2 teaspoon vanilla extract

Preparation:

1. Place peeled pears upright in a medium saucepan. Add orange juice, dry white wine, sugar, cinnamon stick, grated nutmeg, and vanilla. The liquid should come about halfway up the pears; if it doesn’t, add a splash of water to ensure even poaching.

2. Bring the mixture to a gentle simmer over medium-low heat, then cover and reduce the heat to low. Poach the pears for about 25–35 minutes, turning them once or twice so they cook evenly, until they are fork-tender but still hold their shape.

3. Carefully remove the pears from the poaching liquid and set them aside. Continue simmering the remaining liquid over medium heat, uncovered, until it reduces to about 1/4 cup and becomes syrupy—this usually takes around 15–25 minutes. Stir occasionally to prevent sticking. Remove and discard the cinnamon stick.

4. To serve, place each pear on a dessert plate and drizzle with the concentrated citrus-wine syrup. For a more dramatic presentation, slice the pears in half lengthwise and fan them slightly before spooning over the syrup.
