Rich Savory Liver Sauce Recipe for Pasta and Rice

I’ve had people message me several times asking how to cook beef liver so it tastes amazing. Today I’m sharing the fool-proof, simple recipe I always give them. It works every single time.

If you’ve ever thought liver was an uninteresting, negligible part of the cow, think again. Beef liver is flavorful and far more nutrient-dense than many cuts of red meat. If you haven’t yet embraced liver, this sauce is a perfect way to start — rich, balanced, and satisfying.

Beef liver is rich in high-quality protein, essential amino acids, vitamins, and minerals, making it one of the most nutritious parts of the animal. This bold, tangy sauce highlights the liver’s natural flavor while adding layers of tomato sweetness and aromatic spices. It’s excellent over boiled rice, fried plantains, yams, or alongside vegetables.

Liver can be prepared many ways — fried, baked, or blended into a spread. Two of my favorite preparations are:

  1. Stirred into fried rice
  2. Made into this epic liver sauce

To make the sauce, you blend fresh spices with tomatoes, then simmer the mixture with the liver so the flavors marry. Finish with a drizzle of vegetable oil for a glossy, rich finish. The result is a beautiful balance of sweet and zesty: tomato sweetness, the warmth of ginger and garlic, the delicate heat of white pepper, and herb notes from celery and parsley, all supported by the liver’s earthy character.

Epic Liver Sauce

This is my fool-proof liver sauce recipe.
Ingredients
  • 1 pound (about 1/2 kg) beef liver
  • 4 medium tomatoes
  • 1 large onion
  • 7 cloves garlic
  • 1/2 inch ginger root
  • 1 stem celery
  • 2 stems parsley
  • 1 hot pepper / habanero (optional)
  • 2–3 Maggi cubes or other seasoning cubes
  • 1 teaspoon salt (adjust to taste)
  • 1/2 cup vegetable oil (or less, to taste)
  • 1/2 teaspoon white pepper
Instructions

1. Rinse the liver well, trim away any tough membranes and large veins, then slice into bite-sized pieces. If you prefer a milder flavor, soak the sliced liver in milk for 20–30 minutes, then drain and pat dry.

2. Peel the garlic and ginger. Roughly chop the tomatoes, onion, celery, and parsley.

3. In a blender, combine the garlic, ginger, tomatoes, onion, celery, parsley, white pepper, and hot pepper (if using). Blend to a smooth paste.

4. Place the liver in a pot and pour the blended mixture over it. Add about 2 cups of water, the Maggi cubes, and salt. Stir gently to combine.

5. Cook over medium heat for about 25 minutes, stirring occasionally. Add small amounts of water if the mixture reduces too quickly, but avoid diluting the sauce. You want a rich, concentrated liver stock flavor.

6. When the sauce is nearly done, pour the vegetable oil over the top and allow it to cook for another 3–5 minutes. This step enriches the sauce and gives it a glossy finish.

7. Serve hot with boiled rice, fried rice, plantains, yams, or your preferred starch.

Notes:

  • Alternative flavorings: bay leaves, basil, or fennel seeds can be added for a different aromatic profile.
  • This same method works well for kidneys or chicken gizzards — adjust cooking times as needed.
  • To reduce strong liver taste, soak liver in milk before cooking and rinse well.
