Makes about 8 servings

Ingredients

  • 1 cup (200 g) green or brown lentils, picked over and rinsed
  • Fine sea salt and freshly cracked black pepper
  • 2 tablespoons olive oil
  • 1 small white onion, peeled and finely diced
  • 1 large carrot, finely diced
  • 1 small red bell pepper, cored and finely diced
  • 8 ounces (225 g) baby bella mushrooms, finely chopped
  • 4 large cloves garlic, pressed or minced
  • 2 large handfuls baby spinach, roughly chopped
  • 3 tablespoons chopped fresh sage
  • 2 tablespoons chopped fresh rosemary
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 10 ounces (300 g) mixed nuts, finely chopped
  • 5 ounces (140 g) dried apricots, finely chopped
  • Zest and juice (about 1/4 cup) of 1 small orange
  • 3 eggs, whisked (or flax eggs to make vegan)

Instructions

  • Cook the lentils. Combine the lentils with 4 cups water and 1/2 teaspoon salt in a medium saucepan. Bring to a vigorous simmer, then reduce heat to maintain a gentle simmer, cover and cook until the lentils are completely tender, about 20–30 minutes. Drain thoroughly and set aside.
  • Preheat oven and prepare pan. Heat the oven to 375°F (190°C). Line a 9 x 5-inch bread pan with parchment paper.
  • Sauté the vegetables and herbs. Heat the olive oil over medium-high in a large sauté pan. Add the onion, carrot and bell pepper and cook about 7 minutes until softened. Add the mushrooms and garlic and cook another 5 minutes until mushrooms have released their liquid and it has mostly evaporated. Stir in the spinach, sage, rosemary, smoked paprika and thyme and cook 2 more minutes. Remove from heat.
  • Combine filling. In a large bowl, mix the cooked lentils, sautéed vegetables, chopped nuts, dried apricots and the orange zest and juice. Taste and season generously with salt and pepper, remembering salted nuts reduce the amount of added salt needed.
  • Bind the mixture. Purée about one-third of the mixture in a food processor, or mash one-third in the bowl with a potato masher. Return the puréed portion to the bowl, add the whisked eggs (or flax eggs) and stir until evenly combined.
  • Press and bake. Transfer the mixture to the lined bread pan, pressing the mixture down fairly firmly so the loaf holds together. Bake uncovered for about 45 minutes, until the top is lightly browned and the loaf is cooked through. If desired, brush the top with a little melted butter or oil in the final 5 minutes to crisp the surface. If the top browns too quickly, tent with foil.
  • Rest and serve. Remove from the oven and let rest in the pan on a wire rack for 15–20 minutes. Lift the loaf from the pan using the parchment, transfer to a cutting board, and slice with a bread knife. Serve warm with cranberry sauce and/or gravy.

Notes

  • Chopping: Finely chopping vegetables and nuts helps the loaf bind and slice more neatly. A food processor speeds this up, but chopping by hand or crushing nuts in a bag with a rolling pin are fine alternatives.
  • Vegan substitution: For each egg, combine 1 tablespoon ground flax with 2.5 tablespoons water, whisk and let rest 15 minutes to thicken.
  • Make-ahead: Prepare and cook the filling up to 48 hours in advance, refrigerate covered, then press into the pan and bake when ready. You can also bake the loaf ahead, cool, wrap and refrigerate for up to 3 days or freeze up to 3 months. Reheat in a covered pan at 350°F (180°C) until warmed through.
