These blueberry-pineapple margaritas are an easy, crowd-pleasing option—sweet pineapple juice and a homemade blueberry simple syrup lift the classic margarita into something colorful and refreshing.

Ingredients
For the Blueberry Simple Syrup:
- ½ cup sugar
- 1 cup water
- 1 cup fresh blueberries, plus more to garnish
For the Pineapple Margarita:
- 3 cups pineapple juice
- 1 cup white (silver) tequila, or more to taste
- ¾ cup freshly squeezed lime juice
- ½ to 1 cup blueberry simple syrup (to taste)
- Kosher salt, for rimming
- Lime wedges, to garnish
Instructions
- Make the blueberry simple syrup: In a medium saucepan over medium heat, combine the sugar and water and stir until the sugar dissolves. Add the blueberries and bring the mixture to a gentle boil.
- Reduce the heat and simmer for about 5 minutes, until the blueberries release their juices and break down easily when mashed with a spoon.
- Strain the mixture to remove solids and reserve the syrup. Refrigerate the syrup until it is cool before using.
- Prepare the glasses: Dip the rims into lime juice and press into kosher salt to coat. Set the glasses aside.
- In a large pitcher, combine the pineapple juice, tequila, and remaining lime juice. Stir well to combine.
- Place a few fresh blueberries and ice into each glass. Fill each glass about three-quarters full with the pineapple mixture. Slowly pour 1–2 tablespoons of blueberry simple syrup down the side of each glass so it settles slightly at the bottom and creates a pretty gradient effect.
- Garnish with lime wedges and serve immediately.
Notes
If you like a little heat, add a slice of jalapeño to the saucepan while making the blueberry syrup for a subtle spicy note—remove seeds for less heat. Adjust the amount of simple syrup to taste: ½ cup will be less sweet, 1 cup will give a more pronounced blueberry flavor.
