With Valentine’s Day approaching, this easy, charming dessert is a fun way to celebrate. These heart-shaped ice cream sandwiches combine homemade brownie shells with creamy Hudsonville ice cream for a dessert that looks impressive but is simple to make.

You can use any flavor of ice cream, but I chose Hudsonville’s Limited Edition Chocolate Raspberry Indulgence. Hudsonville is one of my go-to brands because their ice cream is exceptionally creamy and made from a long-standing base recipe. They offer a wide range of flavors—from classic Creamery Blend Vanilla to more adventurous options like Strawberry Cheesecake and Brownie Batter Cookie Dough.

For this recipe you’ll need: boxed brownie mix (and the ingredients called for on the box), your favorite Hudsonville ice cream, parchment paper, a metal heart-shaped cookie cutter, mini pretzel sticks, and heart-shaped gummies. The metal cutter helps cut clean shapes through frozen layers. A 16 x 11-inch baking sheet (or two half sheets) works well for baking the brownie base.

To make the brownie shells, prepare the brownie batter according to the box instructions. Spread it evenly across a parchment-lined baking sheet with edges and bake until set—about 15 minutes at 350°F, depending on your oven. Let the slab cool, then cut it in half so you have two even pieces.

Place one half of the brownie slab in a parchment-lined half baking sheet. Spread a one-inch layer of Hudsonville Chocolate Raspberry Indulgence ice cream over that half, smoothing it evenly. While the ice cream firms, prepare the gummy arrows. Use a skewer to pierce a small hole through each gummy before threading a mini pretzel stick through it; this reduces the chance of splitting the gummy. I use two pretzel sticks per sandwich so the arrow spans the heart shape neatly—one stick for each side of the arrow.

When the ice cream layer is solid, use your metal heart-shaped cookie cutter to stamp out hearts. Cut the tops from the reserved brownie slab first to create the sandwich lids. Then cut hearts from the frozen brownie-and-ice-cream slab to create the filled bottoms. If the cutter is having trouble, tap it gently with a meat mallet or press firmly—metal cutters make this much easier than plastic ones.

Assemble each sandwich by pressing a gummy-prepped pretzel arrow lightly into the ice cream on the bottom heart, positioning it so the arrow appears to pierce the heart. Add the top brownie heart and press gently to seal. Return the assembled sandwiches to the freezer so they stay firm until serving.

Ingredients

Instructions

1. Prepare the brownie batter according to the box directions. Line a large (16×11-inch) baking sheet with parchment and spread the batter evenly. Bake at 350°F for about 15 minutes, or until a toothpick comes out clean. Let the brownie slab cool completely.

2. Cut the slab in half. Place one half in a parchment-lined half baking sheet. Smooth a one-inch layer of Hudsonville ice cream over the brownie and return the pan to the freezer until the ice cream is fully firm, about one hour. Keep the other brownie half aside to make the sandwich tops.

3. Prepare gummy arrows while the ice cream firms. Poke a small hole in each gummy with a skewer, then thread a mini pretzel stick through the gummy slowly. Use two pretzel sticks per sandwich if needed to span the heart shape. One gummy on one end becomes the arrow point; two gummies can create the fletching on the other end.

4. Use a metal heart-shaped cookie cutter to cut hearts from the reserved brownie half to form the tops of the sandwiches. Then stamp hearts through the frozen brownie-and-ice-cream slab to make the bottoms. If necessary, tap the cutter gently with a mallet to cut through the frozen layer cleanly.

5. Assemble each sandwich by pressing the gummy-and-pretzel arrow into the ice cream on the bottom heart, then topping with a brownie heart. Press gently to seal. Place the finished sandwiches back in the freezer to firm up for serving.

6. Keep assembled sandwiches frozen until serving. Let them sit at room temperature for a minute before eating so the ice cream softens slightly for a neater bite.
