How to Make it
This recipe yields one large bundt cake or four miniature loaves. I prefer a deep, textured bundt pan that unmolds with pretty peaks—those peaks look lovely dusted with powdered sugar to suggest snowy peaks—but any large bundt pan will work.

Steps Overview

- On low speed, alternately add the dry ingredients and the molasses-coffee mixture to the butter mixture, beginning and ending with the flour mixture. Mix until the batter is smooth, scraping the bowl as needed.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake until a toothpick inserted into the centre comes out clean—about 38–40 minutes for a large bundt (around 30 minutes for mini loaves).
- Cool the cake in the pan on a wire rack for 10 minutes, then invert and cool completely on the rack. If you like, sift powdered sugar over the top when cool for a festive finish.

- Transfer the batter to the prepared pan and smooth the top with a spatula. Bake for 38–40 minutes for a large bundt, or about 30 minutes for mini loaves, until a toothpick inserted into the centre comes out clean.
