Creamy Cannellini Spinach Pasta

- 1 1/2 cups (one 15-ounce can) cooked cannellini beans – drained but not rinsed (do not use no-salt variety)
- 3 1/2 teaspoons granulated onion
- 1 teaspoon salt
- 1/4 teaspoon dried basil
- 3 tablespoons roasted tahini
- 3 tablespoons lemon juice
- 7–8 ounces uncooked spaghetti or fettuccine (gluten-free if desired)
- 1 1/4 cups reserved pasta cooking water
- 1 small onion, diced small
- 1–2 tablespoons olive oil
- 8 ounces (about 2 1/2 cups) frozen, chopped spinach
- 4–5 cloves garlic, minced
Instructions
- Place the drained cannellini beans, granulated onion, salt, dried basil, roasted tahini, and lemon juice into a blender. Blend until smooth and creamy. If your blender is not very powerful, blend a little longer to remove any graininess.
- Cook the pasta according to package directions. Before draining, reserve 1 1/4 cups of the starchy pasta cooking water and set it aside.
- While the pasta cooks, heat the olive oil in a skillet over medium heat and sauté the diced onion for about 2 minutes until softened.
- Add the frozen chopped spinach to the skillet, cover, and cook over medium until the spinach is fully thawed and tender, about 4 minutes. Stir occasionally for even cooking.
- Add the minced garlic to the spinach and onion mixture and cook for about 1 minute more. Remove the pan from the heat.
- Pour the reserved 1 1/4 cups of pasta cooking water into the blender with the bean-tahini mixture and blend until very smooth. This will create a silky sauce; take extra time if needed for a perfectly smooth texture.
- Taste and adjust seasoning as needed. Stir the blended sauce into the spinach and onion mixture and warm gently over low heat until heated through.
- Toss the sauce with the drained pasta and serve immediately, garnishing with extra cracked pepper or a squeeze of lemon if you like.
