These Three-Ingredient Lemon Garlic Chicken Skewers make an easy weeknight meal. They are gluten free, paleo, and Whole30 friendly, and full of bright, savory flavor. They’re also ideal for meal prep and versatile in the kitchen.
Lemon Garlic Chicken Skewers
I have a little confession: I tend to procrastinate. I used to pull all-nighters in college and somehow still did well, and now life keeps me busy in different ways—kids, work, and the small urgencies of everyday life. Sometimes that leads to last-minute cooking, which is how these skewers became a go-to: quick to prepare, forgiving, and reliably delicious.
On a snowy day not long ago I found myself grilling outside despite the cold. A few inches of snow made the yard look pretty, and grilling in winter turned out to be unexpectedly fun. Whether it’s summer or a dusting of winter snow, these skewers are simple comfort food that feels special.

At their core, these skewers require only three ingredients: chicken, a lemon-garlic dressing, and fresh parsley. The chicken soaks in the dressing for a couple of hours to absorb bright citrus and savory garlic, then it’s threaded onto skewers and grilled until juicy and slightly charred. A sprinkle of fresh parsley or other herbs finishes the dish with freshness.

These skewers are highly versatile. Serve them with grilled or roasted vegetables and rice, toss the sliced chicken into pasta with fresh tomatoes, garlic, olive oil, and basil, or use the cooked chicken for sandwiches and salads. Because the base is simple and the flavor profile is clean, you can prepare a big batch and use it throughout the week to create different meals without much extra work.
The lemon-garlic dressing used here is readily available in many stores and provides a balanced citrus-garlic marinade without extra prep. If you prefer, substitute a homemade lemon-garlic vinaigrette made with lemon juice, olive oil, minced garlic, salt, and pepper. Either way, the result is bright, tangy, and satisfying.
