15 Minute Cheesy Tortellini Recipe

Easy Cheesy Tortellini

This is a family favorite that my kids request again and again. It has the comforting familiarity of macaroni and cheese but with tender cheese-filled tortellini and two sauces for extra richness. The name says it all: Easy Cheesy Tortellini—simple to prepare, full of flavor, and perfect for busy weeknights when you want a hearty, cheesy dinner without a lot of fuss.

If you love cheese and enjoy indulgent comfort food, this is a great dish to splurge on occasionally. It’s forgiving, quick to assemble, and bakes into a creamy, bubbling casserole the whole family will enjoy.

To prepare, place the uncooked cheese tortellini in a 13 x 9-inch baking dish. Pour a jar of your favorite spaghetti sauce over the pasta and stir until the tortellini are completely coated; this prevents any pieces from drying out during baking. Spoon dollops of Alfredo sauce on top and sprinkle with mozzarella—use shredded or cubed, whichever you prefer. Cover the dish with foil, bake covered for an hour, then remove the foil and bake an additional 15 minutes so the cheese softens and the edges brown slightly. The final uncovered baking step adds texture and helps the top set without removing the gooey interior.

Why this recipe works

The combination of a tomato-based spaghetti sauce with creamy Alfredo gives each bite a balanced flavor—tomato acidity, savory herbs, and the richness of cream and cheese. Using uncooked refrigerated tortellini means the pasta cooks in the oven while absorbing flavors from the sauces, so you don’t need to boil it first. Baking covered ensures even cooking and a moist, tender texture.

Ingredients

Servings: 4

Author: Jeannie Z

  • 2 (19 oz) packages cheese tortellini, uncooked
  • 1 (24 oz) jar spaghetti sauce
  • 1 (15 oz) jar Alfredo sauce
  • 8 oz mozzarella cheese, shredded or cubed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spread the uncooked tortellini evenly in a 13 x 9-inch baking dish.
  3. Pour the spaghetti sauce over the tortellini. Gently stir or toss until every piece is well coated with sauce; any exposed pasta can dry out while baking.
  4. Using a spoon, drop spoonfuls of Alfredo sauce over the sauced tortellini so there are pockets of creamy sauce throughout the dish.
  5. Sprinkle the mozzarella evenly over the top of the tortellini and sauces.
  6. Cover the baking dish tightly with foil.
  7. Bake covered for one hour at 350°F.
  8. Remove the foil and bake uncovered for an additional 15 minutes to allow the cheese to soften and the edges to brown slightly.
  9. Let the casserole sit for a few minutes before serving so it sets slightly and is easier to portion.

Tips and variations

  • For added protein, stir in cooked Italian sausage, browned ground beef, or shredded rotisserie chicken before baking.
  • Mix in a handful of fresh spinach or chopped sun-dried tomatoes for extra color and flavor—just fold them in with the sauce so they cook through during baking.
  • Try different cheeses: a blend of mozzarella and provolone melts well, while a sprinkle of Parmesan on top adds a savory finish.
  • If you prefer a crispier top, remove the foil for the last 20–25 minutes and switch to broil for 1–2 minutes—watch closely to avoid burning.
  • This dish reheats well. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven at 350°F until warmed through.
