Low Carb Deep Dish Pizza Casserole
Ingredients:
- Pizza dough (use your favorite low-carb dough or a 2-ingredient dough)
- 1 lb 96% lean ground beef or soy crumbles
- 1/2 can diced tomatoes
- 1/2 cup frozen chopped spinach
- 1/2 – 1 cup reduced-fat mozzarella cheese (adjust to taste)
- 2 tbsp marinara sauce
- 2 tsp dried oregano
Notes: If you prefer a lower-point version, use less cheese and increase the vegetables (spinach and tomatoes). With 96% lean ground beef and 1 cup reduced-fat mozzarella, this dish divides into about 5 SP / 5 PP per serving (when split into six servings). Using soy crumbles reduces the points further (approximately 3 SP / 3 PP per serving). You can lower points more by substituting ground turkey or using a very low-carb crust.
Directions
- Preheat the oven to 425°F (220°C).
- Cook the ground meat or meat substitute in a skillet for about 8 minutes, until well browned. Drain any excess fat if needed.
- While the meat cooks, press or roll the pizza dough into a casserole dish. Bring the dough up the sides about halfway to form a shallow “lip” so the filling stays contained.
- In a bowl, combine the cooked meat, diced tomatoes, marinara sauce, and oregano. Mix well, then spread this mixture evenly across the bottom of the prepared dough-lined dish.
- Scatter the frozen chopped spinach over the meat mixture, then top with the mozzarella cheese.
- Bake in the preheated oven for 10–15 minutes, or until the crust is fully cooked and the cheese is melted and bubbly. Cooking time will vary slightly by oven and the thickness of your crust—watch for a golden edge and cooked-through base.
- Remove from the oven and let rest for a few minutes before slicing into six portions.

- Crust options: Use a low-carb pizza crust, a 2-ingredient dough, or a store-bought thin crust if you prefer a lighter version. A thicker crust will make a heartier casserole.

- Cheese choices: Use less cheese, part-skim mozzarella, or a lower-fat blend to trim points. You can also add a sprinkle of parmesan for extra flavor without much volume.
